Molletes are the Mexican equivalent to an open grilled-cheese sandwich. A warm, filling comfort food – usually eaten for breakfast and made using what’s left in the fridge. In Mexico, that’s beans, cheese, and salsa…
INGREDIENTS:
DIRECTIONS:
1. Preheat the oven to 200 C.
2. Butter the rolls on the cut sides. Place them on a baking tray, cut sides down and bake for approx 2 mins.
3. Take the tray out from the oven. Spread a good 2 or 3 tablespoons of the refried beans over the toasted side of each roll.
4. Sprinkle with cheese.
5. Place the tray back in the oven and bake for 5 minutes or until the cheese melts.
6. Serve with a bowl of Pico de Gallo and let your guests top their own mollete.
Buen provecho!
